A guilty pleasure of mine is starchy egg noodles with butter, a little parm and some salt. To me, less is more with pasta. This is a summer pasta that sings to that same choir. It takes about 20 minutes to make and goes great with a cold one. Also gents, this is a really easy one to throw together if you are trying to show your new lady that you are a little more sophisticated than dumping Prego on some Creamette noodles. Angel Hair Pasta with Lemon and Arugula
Adapted from: Family Meals - Tyler Florence
Serves 2-3
Ingredients:
4 T butter
2 T Extra Virgin Olive oil
8 oz Angel Hair Pasta
1 C Arugula
1 Lemon zested
2 cloves of garlic
1 C Panko bread crumbs
Red pepper flakes. Just a small pinch.
In a skillet, add the olive oil on medium heat and bread crumbs. Toast them for about 10 minutes and set aside. Add 2 T of butter and toss in the chopped garlic and red pepper flakes. Low temp, about 15 minutes. Do not burn or blacken, you are just trying to soften them. With about 5 minutes left of the garlic, drop the angel hair in a boiling pot of water with a pinch of salt. Strain well, do not rinse.
Take the garlic off the heat, add the lemon zest. Grab a big bowl and and add the arugula and toss everything together along with plus 2 more T of butter. Salt and pepper to taste.
If it seems dry, add more oil. You can use this as a main course, a pasta course before the meat in an Italian dinner or as a side with grilled chicken. You can eat it cold as well, I added some tomatoes to the cold version and enjoyed that as well.

I love making this pasta, sometimes I add a little sweet chili sauce with extra lemon juice to make it more saucy.
